I have dozens of 710 servers, would never, never, never, consider 4GB
for SBS 2008, never. At least 8GB and a good spot is 12GB.

If you can afford the 710 series you can spare a few $ for 8GB more ram.

At that many people you are probably going to run some SQL stuff on it.
So IMO a 2nd Proc is a cheap
