I've restored all my dashboard widgets.

What .plist file would I restore from Time Machine to show the ones that
were active before the crash?

Well, let's see now... I'm looking in the ~/Library/Preferences, where
you found the ones with "dock" in their names and fixed your Dock issue,
and I see two with "dashboard" in the name there, so I'm inclined to
believe that one of them is the one you're looking for.
