Wouldn't the obvious choice be to copy anything changed since the last
backup? If its not there in the source, you don't want it in the
backup. If its modified in the source you update the backup. If its
new on the source, its copied to the backup. After those choices are
made, then you to decide how many backup copies you want to keep
around. Most of us will keep one. But if its really important, it
would be a good idea to keep another backup in another location, like
online.

rsync copies only the parts of files that have changed.
It will delete files not on the source IF you ask by
a separate option.

I don't have SD! but I would be surprised if it is not similar.
