One answer to my own question seems to be to Right-click or Ctrl-Click
and Hold on the link, and select Download To . . . from the contextual
menu that appears.

Seems to work with all mp3's and at least some if not all individual
podcasts.

But if this is documented in Safari Help, I've not been able to find it.

[Is this deliberate on Apple's part because they want to steer everyone
into iTunes, in order to sell "tunes"? Or am I just paranoid?]

The Control+Click is system wide feature not specific to Safari, would
do the same in any browser you were using.

I have a site which I like to down load, but the webmaster is a screw-up
and often forgets to give me a download link, but just a listen to link
which opens a little control box in Safari itself. When I right click
on the link, it just give me some Adobe flash options. Is there a work
around to turn this into an mp3 file without using Audio Highjack?
