My question is can I uninstall any of the features they aren't using & would it improve the server's performance as just a file & print server?

Just disable the services. SQL is used for the monitoring btw so you may be using SQL without knowing it.

What do you consider showing poor performance? Since the server just sits there and does basic authentication and sharing of files, since you're not using Exchange, explain how it's performing poorly that you want to change? -- You can't trust your best friends, your five senses, only the little voice inside you that most civilians don't even hear -- Listen to that. About the monitoring/reporting component, which is used the SQL 2005 express instance againest the Windows Internal database, just clarify it. Pulling up reports, etc., take way longer than they did on old win2k box.
