One of my customers has a 2008 SBS, but isn't using Exchange, SQL, or
any of the other features included with it.
They ordered it with the thought that maybe they would use it someday
& with the economy like it was they figured they'd better get it when
they did.
My question is can I uninstall any of the features they aren't using &
would it improve the server's performance as just a file & print
server?

Don't uninstall 'em. Just disable the services. SQL is used for the
monitoring btw so you may be using SQL without knowing it.

What do you consider showing poor performance?

Since the server just sits there and does basic authentication and
sharing of files, since you're not using Exchange, explain how it's
performing poorly that you want to change?

You can disable exchange-related services from the services.msc,
sharepoint-related services from Sharepoint central administration (disable
related sharepoint services from services.msc either). About the
monitoring/reporting component, which is used the SQL 2005 express instance
againest the Windows Internal database, just clarify it.

Peachtree accounting is the main culprit.
Pulling up reports, etc., take way longer than they did on old win2k
box.
