In the Newsgroups panel click on the little i (for information) which
is to the right of the newsgroup name. You will then be presented with
a panel which includes the ability to designate the particular server
you wish to associate with that newsgroup. In other words you can
associate different servers with different newsgroups.

Thanks - that worked (although I had to exit and re-start the program
for it to take effect)!
