Not that I'm not grateful for the help of course I am but why would this be
an Office issue? Its the update that is breaking the file assocation?

Specifically:
TIF, TIFF, and MDI files are no longer associated with Microsoft Office
Document Imaging (MODI) after you install Office 2003 Service Pack 3 or
certain post-SP3 security bulletins
