If you stop Exchange there should be no SMTP to use. What do you mean by this? Have you in some way created an additional SMTP server in IIS? somehow associated this with your sharepoint site? As SuperGumby stated, I am not quite following what you've setup, how you've set it up, what you mean by stopping Exchange and using SMTP (SMTP is one of the basis that Exchange works on), and what's exactly going on to be able to help.
