Apart from the price (I'm not sure a mail app is worth money) what's
wrong with Mailforge?

I never tested it for very long, but last time I checked, it still
didn't offer a fully customisable, *vertical* toolbar - old habits die
hard.

I'm also not sure, whether they are going to implement the fine-grained
control currently available through the current x-eudora settings.

But then, I'm not in a hurry.

I think it's probably just that there's not an easy way to do it?

I use SieveScripts with fastmail.fm to perform server side filtering on
some messages. The big advantage is that these messages (Amazon,
mailing lists, specific senders etc) don't appear on my phone when I
check for mail there but they are available in sub-folders if required
and appear in Apple Mail.

The SieveScripts are text-based which is great because they're easy to
extend but perhaps a little intimidating and not particularly well
documented.

It wouldn't be able to edit arbitrary sieve scripts, but I don't see
why something like the rule editor currently in Mail.app couldn't be
used to write sieve rules.

I too have still found nothing to replace Eudora. Mail is sort of OK,
but AddressBook is a bit of a dog for coping with multiple sets of
independently managed contacts.

Entourage I use for Calendar, but even there if it involves anything
more than just me I use Outlook on Terminal Server.
