If you have time go ahead and do it. If nothing else it will add to your experience. I'm not in favor of non-supported configuration only because if someone else tries to maintain the server many things can go wrong. Nevertheless, the configuration that Chad Gross described is very smart. You can definitely have SQL Server as the back-end of WSS 3.0 without issues.
