Exchange restores should be done in the same fashion as it was backed
up. If it was an online backup, using an Exchange aware backup
program, then the restore should be done as an online backup. Offline
restores are only used in times of issues where an online restore
cannot be performed, and are a little trickier.

To answer what happens if the STM file gets deleted, well, the
"Information Store" database is actually comprimsed of both the STM
and the EDB files, combined. The STM contains data from non-MAPI
clients, such as Internet inbound emails, POP, IMAP or OWA users. So
if a MAPI client opens an email that arrived from an outside source,
or from someone internal that sent it using OWA, (which goes into the
STM), the system performs a property promotion into the EDB with a
pointer to the STM for the data, to allow an Outlook user to open the
email, but the data remains in the STM. If the user does not change
anything in the email, it remains in the STM, but if the user changes
something, it is saved into the EDB and removed from the STM.
