This is one of those "scratch your head and walk away" solutions ...

On the server, I opened Print Server Properties then selected the Drivers
tab.

I verified that each of the problematic printers had a Windows XP driver
(all of them had a "Windows 2000, Windows XP, Windows 2003" driver).

I selected each of these drivers and clicked Reinstall.

When I went back to the Windows XP box, I was able to Connect to each one of
the printers. The server served the printer driver for each printer.
