Have you considered adding an occupancy sensor so that it can only run while
someone is there and continuing about 15 minutes afterward?

True, but that system bay be maintenance intensive. Contaminants will
accumulate on the mirror. I know, had some "gotcha" moments in the lab.

But the whole "system" isn't needed. All you do is run the fan when
you get condensation on the mirror with, perhaps, a timer to have it
run for some time after the condensation disappears.

Or simply a door switch. Door closed, fan runs, for X minutes after
door opens.

That still does not stop the mirror from getting dirty. It will only
slow it down a little. Consider the rest of the mirrors and glass in
your house, and the regular cleaning applied there.

Yep. Every two weeks the cleaning lady comes with her three sisters
and they swarm thru the house cleaning everything that doesn't bite
