I must admit that it would be a hell of a lot more useful as a
photographers toy if it had some way of getting pictures off a camera,
such as a single USB port.

Exactly.
Something to check images immediately for sharpness etc. and later you
could pop it into the keyboard dock for a bit of editing/emailing pics.

But its lack of ports is disappointing: no mouse etc.

There's an accessory that allows you to connect an SD card, and another
(in the same box?) that allows you to connect a camera. The latter is
basically a dock to USB-A adapter; so it would be physically possible to
connect other USB devices to an iPad. Whether they'd be supported
(third-party software?) is a different question...
