They don't understand about backup, and they don't bother with it (even when it's really easy with Time Machine). The idea will be that the iPad will back up everything automagically to the cloud (hosted in that gigantic datacentre Jochem mentioned), so when you have some sort of failure, you can just get do a full restore (to a new iPad if necessary) from what's stored in the cloud.
