There's an officially blessed mechanism to do this on the iPad, ie OS
3.2, and I presume OS 4.0.

AIUI it copies stuff into iTunes, so isn't a sync as such.

That's a thought, but I wouldn't know. I'd be interested if you discover
that one does exist, though...

I thought that only showed up in the betas and didn't make it out
officially?

No, but it explains why Apple clamped down on unofficial methods.
