It's just the outgoing server that is failing

Within Mail's Preferences -> Account -> Advanced, be sure to select
'Authentication': password at the bottom of the pane.

Ive got use authentication ticked in the setting up part but it just doesn't
seem to be able to connect when it says 'checking connection' I do find it
odd that it doesn't ask how it's authenticating at this point?

But when you recheck your preferences, under 'Account' -> 'Advanced' is
it definitely saying 'Authentication: password' at the bottom of that
pane?

BTinternet mail requires password authentication for outgoing and
incoming mail.

It doesn't get that far as when its checking the server it never connects so
it doesn't set it up.
