All they needed to know is that they breathe and are alive, they didn't need to analyze the air. Knowing that they were breathing nitrogen would have been as useless as having a book on PC networking when they didn't have a PC. The Bible isn't about Science, it's about Jesus from hundreds of years before he was born until eternity. Read about how the Jewish people celebrated Passover and how what they celebrated was fulfilled in Jesus, even though they don't believe in Jesus. A lamb without spot or blemish was to be separated for a sacrifice to God, the same moment Jesus was taken from the garden and separated to be judged. At the same moment the lamb was declared without fault, Jesus was declared to be innocent. While the lamb was being slain as a sacrifice to God, Jesus was being slain.
