I'm speaking of standalone use here. If you're synching with iTunes,
presumably it backs everything up, like an iPod.

Indeed they do.

And yes, I'm very much hoping that syncing/backing up over the air to
free Mobile Me will happen soonish.

Exactly my thoughts on the keyboard. In fact, I found quite handy when
away from the 'real' keyboard (an Apple Wireless that I'd bought months
ago for the purpose), I find it useful when talking to people in Spanish
to switch keyboard to a Spanish layout -which I'd never used in a
computer but does kind of make sense once you get used to that and to
the switching.

It can do, it had done several times with different things I'd tried. So
I went and got an iPad dock (but not the keyboard dock) for that reason.
